As the name suggests, the Monocultivar Coratina is an extra virgin olive oil obtained from 100% Coratina olives, a single fine variety of olives that gives the oil a broader and more valuable organoleptic profile. Coratina, a typical native olive of the Apulian territory, gives life to an intense fruity oil with great personality, with a rich and complex aroma, with hints of fresh tones of freshly cut grass, artichoke and green tomato. In closing it gives a harmonious sensation of bitterness and inimitable spicy.
From the moment of the olive harvest, which takes place between October and November, to the pressing in a single-cycle continuous cold-pressed oil mill (25 °) only 6 hours pass to guarantee the freshness of the product and the conservation of its organoleptic properties.
Very low acidity and very high content of polyphenols and tocopherols have brought this oil among the best 50 in the world and its quality has been repeatedly recognized by international juries that have made it an award-winning oil.
