Farmer's Artichokes in Extra Virgin Olive Oil

For our peasant artichokes we use only the heart of the artichoke, the sweetest and softest part. As per tradition, the artichokes are cut into wedges and seasoned "peasant style" according to an ancient Apulian recipe. The consistency is soft and has a very intense flavor flavored with Mediterranean spices.
Our artichokes can be used alone as tasty appetizers or in combination with aged and semi-aged cheeses (pecorino type). Interesting alternatives are the use with smoked fish, shellfish or seafood salads. Also excellent if inserted in seasonal vegetable salads, with pasta or rice salads. Its best use is in combination with local red meats cooked on the grill or on the grill.
